There’s nothing like a good old fashioned meatball recipe, especially a cleaned-up, veggie-packed version. We love serving our Healthy Slow-Cooked Italian Meatballs with a huge side salad.
HEALTHY SLOW-COOKED ITALIAN MEATBALLS
Dairy-free
Serves 4
INGREDIENTS
For the meatballs:
- 500g lamb mince
- 2 carrots, grated
- 2 zucchinis, grated
- 2 garlic cloves crushed
- 1 onion, diced
- ¼ cup breadcrumbs
- 2 tbsp Italian seasoning
- 100g shredded parmesan
For the sauce:
- 2 tbsp olive oil
- 700g jar passata
- 400g tin chopped tomatoes
- 1 tbsp dried Italian herbs
- 1 medium-sized brown onion, roughly chopped
- ½ cup water
- Fresh rosemary, to garish
METHOD
- Place all meatball ingredients into a large bowl and mix until well combined. Roll into medium-sized meatballs.
- Use the sear function on your slow cooker and heat the meatballs, turning occasionally, until browned all over.
- Add the remaining sauce ingredients (except the rosemary) to the slow cooker. Cover and leave to cook on high for 3 hours or on low for 6 hours, until the meatballs are tender and cooked through.
- Garnish with rosemary to serve. We love plating these meatballs up with a huge side salad or over pasta!
