Vegan / Dairy-Free / Refined Sugar-Free
Base Ingredients
½ cup rolled oats
1 egg
Toppings:
Peanut butter, to spread
½ cup frozen berries, melted
1 tablespoon coconut or natural yoghurt (optional)
Honey, to serve
Method
Combine base ingredients in a small bowl to form the pancake mix.
Add oil of choice to a medium-sized pan and bring to medium heat. Pour in pancake mix and use the back of your spoon to flatten into a pancake shape.
Lightly pan-fry on each side for 1-2 minutes until golden. While you do this, melt berries in microwave for 1 minute.
Remove the pancake to serve. Spread nut butter and top with melted berries, yoghurt (if using) and a drizzle of honey.
