Healthy Vegetarian Beetroot Burger

Ingredients
- 6 store-bought beetroot patties – we love using the Wildly Good Beetroot & Black Bean Burgers from Woolworths.
- 6 wholemeal or multigrain burger buns
- 2 avocados
- Mixed lettuce
- 2 tomatoes, sliced
- Whole egg mayonnaise
Method
- Cook the beetroot patties as per packet instructions.
- To serve, toast the burger buns. Spread 1/4 an avocado on both sides of each burger bun. Add lettuce, tomato, beetroot burger patty and mayonnaise.
