We love making this meal any night of the week, but particularly when we are short on time. Aside from being quick and easy, it’s packed full of nutrition. Fish is loaded with essential nutrients, such as protein, vitamin D and omega-3 fatty acids.
Add a side of steamed vegies or a mixed leaf salad and you are sorted! As a little tip – we make twice the quantity and have it for lunch the next day – the flavour of the leek and lemon gets absorbed by the fish. Lipsmackingly good!
