Three words that have scared me for quite a long time: One. Pot. Pasta.
It goes against my Italian heritage*. Honestly it seems wrong. How can it be? One Pot Chicken – yeah sure. One Pot Lamb Ragu, yes also possible but one pot pasta ???? No.
My whole life I’ve done pasta and the sauce totally separately. You need the sauce to simmer, to take time for the flavours to come out. That’s what my mum said. Yours too, I’ll bet. Yes? Well, maybe mama hasn’t tasted this one pot pasta!
So I heard about this dish and have had it in the back of my mind for ages and then recently I figured what the hell, let’s just try it and see.
The recipe is below, but in short, you put everything into the pot, cover it in water, bring it to the boil and then let it simmer for 10 minutes and it’s done.
How is it??? Delicious !!!!!!!!!! It’s actually very surprisingly delicious.
A few key things i would suggest is that it is enhanced by having strong sauce ingredients like onions and basil and maybe chorizo. I don’t think it would be as yummy with just a plain sauce.
Also, to be honest I think it tastes better the day you make it, as opposed to when you make pasta the traditional way and it gets better when you eat it later in the day or the next day, once it’s had more of a chance to soak up the flavours. In my opinion one pot pasta is the best on the day of making.
What is fabulous about it though, is that you can use up lots of leftover vegetables – it is an amazing way to clear out the fridge!
When I shared this on Instagram I was flooded with people telling me that they would make it – then I was flooded with people reporting back that they had made it and loved it. The key point that seemed to come up over and over was how many people it fed and how cost effective it was.
