TURMERIC CHICKEN & SALAD SANDWICH

INGREDIENTS
For the turmeric chicken:
- 250g shredded chicken breast – we love using the Prime Pulled Chicken from Woolworths
- 2 tbsp ricotta cheese
- 2 tsp turmeric
- ½ tsp chilli flakes
- 1 lime, juiced
- ½ tsp salt
For the sandwich:
- 4 slices wholemeal bread or sourdough
- 1 tbsp ricotta cheese
- ⅓ cup purple cabbage, thinly sliced
- 1 cup mixed lettuce leaves
- 3 radishes, thinly sliced
METHOD
- Prepare the turmeric chicken by adding the shredded chicken to a bowl. Mix well with ricotta cheese, turmeric, chilli, lime juice, and salt until combined. Set aside.
- Toast your bread, then spread the tablespoon of ricotta cheese evenly on each piece.
- Layer sandwich with cabbage, lettuce, radishes, and turmeric chicken.
