Scan your Instagram feed and you’ll see that Fridays are full of tired, overworked friends desperate for cocktail hour. We say it’s time to crank things up a notch and host yourself a glam, old-school cocktail soiree. And we’ve got all the inspo you need right here. Shake shake shake.

Make like a cocktail queen with these delectable recipes…

The Big Appleberry

Serves 1

Ingredients:What to do:
  • 3 blackberries
  • 2 raspberries
  • 2 large red seedless grapes
  • 60 ml cloudy apple juice
  • 45 ml Cognac
  • 10 ml lemon juice
  • 1 tsp caster sugar
  1. Crush berries and grapes with muddler/wooden spoon in a cocktail shaker
  2. Add the remaining ingredients and fill the shaker with ice
  3. Shake well, strain into a tall glass with ice
  4. Garnish with your choice of berries and apple slices

Barbados Punch

Serves 6

Ingredients:What to do:
  • 150 ml Mount Gay Rum
  • 45 ml lime juice (approximately 2 limes)
  • 600 ml sparkling apple juice (best if chilled)
  • 15 mint leaves – torn
  • 1 Granny smith apple (cut into 8 slices)
  • 1 lime (cut into 8 slices)
  1. Combine all ingredients into a 1 litre jug and fill with ice cubes
  2. Serve in tumblers or cocktail jar and garnish with mint sprigs

 

(if you prefer to refrigerate the jug ahead of serving, add the sparkling apple juice and ice at the very last minute)

White Peach Bellini

Serves 1

Ingredients:What to do:
  • 2 white peaches, scored, blanched, peeled, stones removed
  • Chilled prosecco
  1. Process peaches in a blender, then pour purée into a champagne flute. Top with chilled prosecco and serve.

Gin & Elderflower Sherbet

Serves 4

Ingredients:What to do:
  • 50 ml elderflower cordial               
  • 50 ml good-quality gin
  • 1 handful ice
  • 150 ml bitter lemon
  • a few strips lemon zest

  1. Mix the elderflower cordial and gin together in a small glass or cup.
  2. Crush the ice by placing it in a tea towel or plastic food bag, tie, then bash with a rolling pin.
  3. Add it to a cocktail glass then pour over the gin mixture.
  4. Top with bitter lemon and a few strips of lemon zest.
  5. Serve as a refreshing summer cocktail.
